Virgin Voyages is turning up the heat on high seas dining with the debut of Rojo by Razzle Dazzle, a Spanish-inspired restaurant aboard its newest ship, Brilliant Lady. This innovative venue builds upon the success of Lucky Lotus by Razzle Dazzle, the Chinese-inspired eatery launched aboard Scarlet Lady in November. Sailors can expect bold flavours, communal traditions, and culinary artistry that promises to ignite the senses.
A Culinary Revolution
At the helm of Rojo are acclaimed chefs Justin Severino and Nate Hobart, celebrated for their success at Morcilla, a Spanish-style charcuteria in Pittsburgh. With four James Beard Foundation Award nominations under Severino’s belt, this duo is bringing their passion for Spanish gastronomy to Virgin Voyages. The menu features some of Morcilla’s iconic recipes, such as the legendary Oxtail Montadito with braised oxtail, caramelised onion, mahón cheese, and crostini.
By day, Sailors can indulge in Razzle’s Spanish-American brunch, featuring dishes like jamon croquettes alongside acai bowls, pastries, and frittatas. When the sun sets, Rojo transforms into an elevated dining space pulsating with Spanish energy, serving up pintxos, tapas, and platos grandes, each inspired by Spain’s renowned culinary regions.
Sip the Spirit of Spain
Virgin Voyages has partnered with Onada Consulting to bring authentic Spanish flavours to Rojo’s cocktail menu. Iconic bars from cities like Barcelona, Madrid, and San Sebastian influenced the drink list, which features vibrant sangrias, artisanal vermouths, and sherries perfectly paired with dishes. Guests can also explore bold reds like Rioja and refreshing whites like Albariño from Rias Baixas, offering a true taste of Spain’s vineyards.
A Redesigned Dining Space
To complement the culinary experience, Virgin Voyages has reimagined the Razzle Dazzle space into a modern homage to Spain’s communal dining traditions. With rich wooden accents, deep reddish-orange tones, sleek finishes, and a mix of shared tables and intimate nooks, the vibrant atmosphere is perfect for connecting over exceptional food.

More Culinary Delights Await
Rojo by Razzle Dazzle isn’t the only refresh coming to Virgin Voyages. Extra Virgin, the fleet’s Italian-inspired restaurant, is introducing new pastas, seafood risotto, and roasted monkfish, while Gunbae, the only Korean BBQ at sea, welcomes dishes like kimbap rolls and bo ssam (whole roasted pork with oysters and caviar).
Virgin Voyages has also unveiled seven original productions debuting aboard Brilliant Lady this autumn, alongside fresh updates to its innovative dining offerings.
