At the helm of this culinary transformation is Executive Chef Aaron Teece, whose meticulously crafted spring menu celebrates the region’s finest seasonal bounty. Signature offerings include a sumptuous Prawn Bisque Risotto, enriched with local prawns, delicate saffron, and a hint of Espelette pepper; a vibrant Seafood Chowder featuring lemon myrtle–steamed fish and fresh mussels; and a Slow-Cooked Lamb Shoulder, each mouthful layered with nuanced textures of caramelised onion. The wood-fired creations—Australian Bay Bug Karaage and Scallops crowned with crispy chilli and potato—add a smoky complexity to the menu. This elegant affair transforms the poolside into a haven for gourmet indulgence featuring a lavish four-course dining experience ($395 per guest), an effortlessly chic Sunset Bar soirée with roving canapés and a premium 3.5-hour beverage package ($295 per guest), or an exclusive VIP cabana retreat starting at $4,000, complete with private host service. Guests will be enchanted by live race coverage, fashions on the field, and the vibrant rhythms spun by DJ sets, all presented under the masterful hosting of MC Dan Anstey.
