Hurtigruten, Norway’s legendary coastal travel expert, continues setting the standard for authentic regional cuisine and immersive experiences on the Norwegian coast. The company’s latest innovation – the Sámi Culinary Ambassador Menu by Máret Rávdná Buljo – is now served onboard Hurtigruten’s ships, introducing guests to the rich indigenous culinary heritage of the Sámi people of Arctic Europe.
Savouring Norway’s Coastal Kitchen: A Sámi Food Revolution

As a highlight of Hurtigruten’s award-winning Norway’s Coastal Kitchen concept, this menu features ingredients from over 70 local producers. Guests cruising along the world’s most beautiful voyage can now try traditional Sámi dishes—from reindeer to seafood—and connect with centuries-old history told through each plate.
Máret Rávdná Buljo, Hurtigruten’s Culinary Ambassador, shares: “It was important for me to include many aspects of Sámi food and tradition, from reindeer and seafood to storytelling. I hope international visitors feel a connection with Sámi culture when they visit Norway.” Her contribution was further recognised at this year’s Matprisen awards honouring sustainable food, where she was one of three nominees.
A Taste of the Arctic – Signature Dishes Across the Fleet
Dishes from Buljo’s new menu can be found in restaurants Árran (Signature Voyages: MS Trollfjord, MS Finnmarken), Torget and Kysten (Original Coastal Express ships), and Brygga Bistro. Expect both vegetarian and traditional options, including:
- Salmon, ember bread, cloudberries, and truffle seaweed
- Broth with dried reindeer meat
- Reindeer liver burger and reindeer roast
- Lingonberry porridge with whipped cream, toasted barley grains
- Warm coffee cheese with redcurrant sorbet and caramel sauce
The MS Midnatsol will soon be upgraded to a Signature ship, offering expanded culinary experiences and additional Svalbard Line voyages from May 2026.

Hurtigruten’s commitment to Sámi food culture goes beyond flavour: it honours indigenous knowledge and craftsmanship, rooted in oral traditions and passed through generations.
