A Legendary Collaboration in the Heart of Hanoi

The exclusive dinners, held on October 31 and November 1, 2025, from 6 p.m. to 10:30 p.m., promise an evening of culinary artistry and innovation. Guests will indulge in a meticulously crafted multi-course menu that harmonises traditional Kyo-ryori techniques with Metropole’s French sophistication — enhanced by Sturia caviar and exceptional wine pairings.
Chef Takagi, who has held two Michelin Stars for 15 consecutive years, is revered for his mastery of Kyo-ryori, the cuisine of Kyoto that celebrates purity, balance, and subtlety. Each dish embodies Chef Takagi’s philosophy of transforming natural ingredients into edible art — where colour, texture, and aroma carry equal weight.
A Menu of Artistry and Elegance
This exclusive collaboration features an exquisitely curated selection that blends the best of Vietnamese, Japanese, and French ingredients:
- Sushi bonbon – tuna, salmon, dill
- Crabe – Vietnamese crab, Hokkaido scallop, dashi jelly, kikuna
- Poulet Jaune – French yellow chicken, “Albufeira,” smoked potatoes, quenelles, roasted jus
- Boeuf – Wagyu beef tenderloin, bamboo shoot, dashi, Japanese pepper sauce
- Îles flottante – vanilla custard, baked egg whites, salted caramel
The four-hands dinner is priced at VND 4,500,000++ per person, or VND 7,000,000++ with wine pairing. Accor+ Explorer members enjoy a 10% discount on the menu and 15% off wine pairings.
